PRODUCTION PROCESS: Artisanal - Cooking pit lined with volcanic stone. Cooked with wood fire using cottonwood, oak, and mesquite. Crushed with axe and mechanical mill. Open fermentation. Double distilled in copper still.

This artisanal drink celebrates traditional methods of production, ensuring that each bottle captures the essence of its origin. Our producer, Chihuahua Artesanal, works with the Mexican authorities and biologists to obtain legal permits for limited harvest of sotol plants in a designated region for a period of 5 years. The sotol plants are carefully hand selected and harvested at the height of maturity, when they are 8-15 years old. During harvest, the leaves are chopped away from the plant, exposing the head or piña, which is removed using a steel bar. The roots and meristem of the plant is left unharmed, allowing for re-growth. Unlike agave harvests for tequila or mezcal, harvesting sotol does not kill the plant. After a region has been legally harvested for 5 years, it is prohibited to harvest from that area for 10 years, allowing the sotol plants to re-generate and reach maturity again.
